Can you believe that ME, the MEAT crazy lover craving person has only eaten vegetables for the last past 5 days?!?! I know its not a lot but for me its a HUGE achievement! You guys may be wondering why? Well me and Asaf want a more healthy eating style so there's a new rule in the apt. (let's see how long it lasts muahahaha): Meatless Mondays, Tuesdays and Wednesdays. Exception of the rule, when we go out to a restaurant we are allowed to order meat (chix, beef, and pork).
Soooooo, I've been trying out new recipes and this one turned out pretty good! It's easier for me to eat only vegetables here in Israel because they are so tasty, crispy and crunchy. Besides, Carmel Market is 2 steps away from my apt. I get fresh veggies everyday :) Also, israelis eat tons of vegetables so you get pretty fast used to it.
I know the pics are not that good but at 10pm, hungry from the gym I just took my phone and took a pic. Sorry!
This recipe yielded for 4 servings.
150 grams of ricotta cheese
150 grams of mozzarella (shredded)
150 grams of parmesan cheese
6 lasagna noodles
1 small can of tomato paste
1 egg
500 grams of spinach
oregano
basil
salt
paprika
pepper
1 can of mushrooms
1 medium onion
2 tablespoon of olive oil
4 garlic cloves
1 small glass of water
Pre-heat oven to 200C.
Chop the onions, garlic, mushrooms. In a skillet pour 1tb of olive oil and cook the garlic+onions+mushrooms. Season with salt, pepper, oregano, and basil.
Boil the spinach for 5 minutes, squeeze the water, pat it dry and chop it.
In a medium bowl beat 1 egg and then add the ricotta, shredded mozzarella + parmesan + ricotta. Then add the spinach and mix it until incorporated. The mixture will appear with a pasty constistency. Also, season with salt and pepper.
In another small pan, add 1 tb of olive oil and pour tomate paste, the glass of water until is reaches a saucy consistency. Season with salt, pepper and paprika.
For the assembly:
1.On the bottom of the pan pour a bit of tomato sauce,
2. Then place on top the first 2 lasagna noodles.
3. Spread the mushroom+onion+garlic mixture
4. Spread the spinach+cheese mixture
5. Again pour a bit of tomato sauce
Repeat this one more time and then on top of the last 2 lasagna noodles place tomato paste, shredded cheeses (3 of them) and at the end slice mozzarella pieces and place them all over the lasagna.
Cook for 50 min.
