During the weekend my sister and I decided to bake some cookies to kill boredom. Result: Success! The recipe is courtesy of: Chewy, Gooey, Crispy, Crunchy Melt-In-Your-Mouth-Cookies by Alice Meldrich. This book was a Christmas gift from my dear friend Anita.
Actually, this time the cookies were baked by Chavi while I just made company along with Pachita. The original recipe had raisins and no chocolate chips, we opted to customize it to the ingredients we had home.
Ingredients:
2 cups of rolled oats
1/4 cup of water
1 3/4 cups of flour
1/2 teaspoon of baking soda
1 teaspoon of ground cinnamon
1/4 teaspoon of nutmeg
2 sticks of unsalted butter
3/4 cups of brown sugar
1/2 cup of granulated sugar
1 teaspoon of vanilla extract
1/2 teaspoon of salt
1 egg
1 cup of cranberries
1 cup of semisweet chocolate chips
In a bowl mix: oats, flour, baking soda, cinnamon, nutmeg and combine.
Cut the butter in chunks and melt in a saucepan over medium heat then stir in sugars, vanilla and salt. Add the egg. Pour the flour mixture and incorporate until moist. Pour cranberries and chocolate chips and let the dough stand for at least 1 hour in the refrigerator.
Preheat to 350. With a tablespoon scoop the dough and place it on a cookie tray about 2 inches apart. Bake for around 12 minutes until the cookies are golden brown.
