I know, I know, its been so long since there's a post. Sorry, I have been busy with the many changes in my life which are very soon to come! Last night, I hosted a small dinner for my ex-coworkers. We had fun eating (obviously) and catching up. The theme was an Israeli dinner, which Irma insisted so I decided to try to cook for the first time some plates (they were my lab rats hehehe). Moroccan meatballs, Yellow rice, Israeli salad and Hummus, nice company and lots of laughs. I will post the recipe for the meatballs + tomato sauce.
Meatballs:
(yielded 37 meatballs)
2 lbs of ground beef
2 lbs of ground beef
1 1/2 teaspoon of salt
1 1/2 teaspoon of ground cinammon
1 1/2 teaspoon of coriander
1 teaspoon of pepper flakes
2 garlic cloves, chopped
1 medium red onion, chopped
1/2 a bunch of parsley, chopped
Combine all the spices and mix it with the ground beef, then incorporate the onion and garlic. Form the meatballs and fry them in a pan until done, set aside.
Tomato Sauce:
1 can of plum tomatoes (Muti is the best brand ever for tomato sauce)
1 can of tomato paste
1 teaspoon of fennel
1 teaspoon of cumin
1 teaspoon of paprika
1 teaspoon of ground ginger
1 pinch of pepper flakes
1 teaspoon of salt
Pour tomato sauce into a large pan and smash the tomatoes. Incorporate the spices and tomate paste. Let simmer for around 20 minutes until sauce is thick.
After the sauce is ready, place the meatballs into the sauce and let simmer for around 10 minutes.
